Blackwoods Distillery was founded by Caroline Whitfield in 2002 with the aim of building and becoming the Shetland Islands' first Scottish whiskey distillery. In 2005 the first Vintage Dry Gin 60% and 40% came to light. Gin is made unique by the use of botanical herbs grown and harvested by hand during the same year and subsequently selected and used taking into account the season and climate of the harvest. Every summer it is decided which botanicals to collect, to obtain an increasingly refined product.
Blackwoods is the world's first vintage gin, made with botanicals harvested in the Shetland Islands; the flavor of this gin varies slightly from vintage to vintage as the botanicals reflect the climatic conditions of that year.
