The Maison was founded in 1860 by Edmond de Ayala, a name that seems created especially, by pure chance, for the town of Aÿ. The Maison is animated by the spirit of excellence and adventure inspired by its founder.

Ayala is above all a unique place, at the crossroads of the grand crus of Champagne. In this maison everything is made on site and in a workmanlike manner, that of assembly. It celebrates a modern conviviality, where sincerity blends with tradition, while being driven by innovation.

Each cuvée is characterized by the elegance of Chardonnay. The pure spirit is found in the micro-vinification in stainless steel tanks associated with a minimalist dosage, which allows the best of the raw material to be revealed, respected in its entirety.
